To view a demo, make a "demos" folder in your "GameData\base" folder, if there isn't one there already.

Download and unzip the demo file (if necessary).  Place the demo file in the "GameData\base\demos" folder.

Start the multiplayer game, then click PLAY -> PLAY DEMO.  Select the demo that you want to play from the list.

You must have the same version of the game that was used to make the demo to play the demo.  For example, demos made with Jedi Outcast 1.03 can't be played in Jedi Outcast 1.04, and vice versa.  Demos made in Jedi Academy 1.00 can't be played in Jedi Academy 1.01.

You might want to enter /cg_thirdperson 1 in the console before playing the demo.  It will allow you to see the players from a third-person viewpoint.
